Vanilla Mascarpone and Berries in Peppered Balsamic

Ingredients

Blueberries, 100 g

raspberries, 100 g

strawberries, 100 g

Blackberries, 100 g 

Balsamic vinegar, 1/4 cup

Sugar, 4 tablespoons

Penja peppercorns(white or black), half a teaspoon

Mascarpone cheese, half a cup

50 ml of thick cream

Pure vanilla essence, one tablespoon(optional)

 

Instructions and cooking

 
Step 1:  Wash all the fruits and cut them into big pieces, I cut mine into two pieces.
 
Step 2: In a medium saucepan over medium heat, combine vinegar, 1 tablespoon of the sugar, and the crushed Penja peppercorns until the sugar dissolves. Bring to a boil and continue to cook for 5 minutes or until the syrup is reduced to 2 tablespoons or less. Place in a small bowl, cover and allow it to get cold. You may add one tablespoon of vanilla essence if you wish.


 Step 3: Berries and the final 3 tablespoons of sugar should be combined in the meantime. Add the chilled balsamic mixture and gently toss to evenly coat. Allow 30 minutes to pass at room temperature.

Serve your Vanilla Mascarpone and Berries in a Peppered Balsamic mixture in 4 bowls. Do not forget to drizzle mascarpone topping over the berries :-). Enjoy!
